Chicken marinade -
Cut one chicken breast in half to make it thinner.
To the chicken add 2 cloves of garlic finely chopped, small ginger grated, chopped coriander, pinch of salt, hot sauce of any kind, 1 lime juice and dash of olive oil. Let it marinade for few minutes.
Grill the chicken untill golden on both sides set aside to serve.
Salad -
Chopped salad leaves, cucumber, shallot, chilli (optional), tomato.
Thai dressing -
1tbsp fish sauce
Small knob of palm sugar
Chilli finely chopped
Grated clove of garlic
Olive oil / peanut oil
Mix all together untill sugar dissolved.
Assemble -
Place the chicken on the plate, add a bunch of salad, spoon the dressing over!!!!!
